Produce and seasonality are at the heart of everything we do. Forced rhubarb is a quintessentially British ingredient - grown in the dark to prevent photosynthesis, resulting in its vibrant pink hue, sweeter taste, and more delicate texture than its outdoor-grown cousin. Its season is short, and it deserves to be celebrated. We’ve done just that with our Rhubarb Sour - light, fluffy, and delicious. 

<h1>RHUBARB SOUR</h1>

INGREDIENTS

  • 50ml Cornish Gin

  • 50ml Rhubarb Syrup

  • Juice of one lemon

  • One Egg white (or 30ml pasteurised egg white)

METHOD

  1. Fill a martini glass with ice to chill. We love the classic Art Deco Nick and Nora style. Add all ingredients to a shaker and shake hard to create a foam.
  2. Discard the ice from the martini glass, add fresh ice to the shaker, and shake again to chill your foamy cocktail. Double strain into the martini glass and garnish with a drizzle of rhubarb syrup or a piece of candied forced rhubarb.
