EARLY EVENING PICK-ME-UPS

This is a drink to pull out on those cold autumnal and winter nights. The toasted spices bring aromatic warmth to this classic drink.

SERVES 1

<h1>HOT BUTTERED RUM</h1>

INGREDIENTS

  • 100ml Pure Golden Rum

  • 75ml water

  • 25g unsalted butter

  • Pinch smoked Cornish sea salt

  • Strip of orange peel

  • 2 cloves

  • 1 bay leaf

  • 2 crushed cardamom pods

  • 4 black peppercorns

  • 2 tsps soft brown sugar

  • 1 cinnamon quill cut in half

METHOD

  1. Gently toast the cloves, cardamom, peppercorns and orange before adding the water and sugar. Bring to a simmer then lower the heat before adding the rum and butter. Then heat gently and do not boil.
  2. Stir before straining into a jug, stick blend to foam and serve with grated nutmeg and half the cinnamon quill in each drink.
